Well, folks. It’s day three of Spring Break (yea!) and it is also day three of 100% rain all day (not so much yea).

At the beginning of the break, I had grand aspirations of going for long runs, riding my bike, cleaning my car, cleaning Mr. Torres’ car and ending the week by going camping.

Instead, I have been mostly trapped inside. I’ve been busy, but trapped, nonetheless.

One of my very favorite things about camping is making s’mores made over a campfire. I’ve had the ingredients ready since last Friday:)

Sadly, today was the day that I finally accepted the fact that even if it does stop raining by this weekend, things are not going to be dried out enough to go camping. No s’mores made over a campfire this spring break.

Fortunately, I stumbled upon this delicious sounding recipe for S’mores Cookie Bars!

And because I’ve never really been one to leave well enough alone, I added peanut butter and made them into Peanut Butter S’more Bars! Perfection!

Verdict: I love s’mores. Looooove love love them. Therefore, it isn’t too big of a stretch to see why I think these cookie bars are absolutely delicious. The might have even earned a spot in my all-time favorite top ten list of desserts….thinking about it…yep, I’m pretty sure they’re on the list. I took these up to the cafeteria to share with Mr. Torres and his co-workers. They seemed to approve:) If you love s’mores and you love peanut butter, you will love these…especially if a campfire just isn’t going to happen in your near future!

    Oh yes. These look like heaven. I LOVE s’mores, and I love peanut butter. I want them now, but I currently don’t have an oven, so I’m very jealous!! ;)

    Chocolate and peanut butter — one of the greatest food combinations ever! These sound and look ooey-gooey delicious!
