Chances are, you already have a recipe for a Mexican casserole that you love.

I have two.

One that my mom makes and one that my grandma makes.

They’re both delicious, easy and great for feeding large numbers of people!

And now I have my own Mexican casserole recipe to call my own.

Except it’s not a casserole…

It’s a cobbler!

And before you decide that eating a savory cobbler is just a bit too weird, take the fifteen minutes that it takes to put this together and give it a try!

It just may be your new go-to Mexican casserole…or in this case, cobbler…recipe!

Verdict: This recipe is perfect for when you’re serving 5, 10, 25 people! Mr. Torres and I didn’t mind, but it seemed like we were eating Mexican cobbler alllll week:) I will definitely be saving this recipe for the next time we have dinner guests! It’s easy, uses ingredients that are typically pantry staples and full of flavor. It’s a winner!

    This looks delicious & I’ll probably try it out next week! I am always looking for meals that make a lot, because my husband & I love to have leftovers! Meals that only make enough for one “go around” always seem like a waste to me. Thanks for sharing!

    I usually enjoy savoury things over sweet things, so this sounds so delicious! I will definitely be checking out this recipe, hopefully I can find a crowd to enjoy it with me :)

    Yum!!! I actually JUST finished eating my taco lasagna, which is one of my husband’s favorite meals. I have no doubt that he would love Mexican cobbler, as well!

    Kacey thank you for a wonderful recipe! Duane and I made this on Sunday and the only thing we disagreed on was the amount of cooking mix – I loved the amount for the recipe, but Duane would have preferred a little less carbs. We divided the casserole and have been eating it for lunch every day this week! So perfect and easy!
