Energy Bites

For Bellwork recently in science class, I had my sixth graders think about the following quotation and make a list of five things that make them happy.

“Happiness doesn’t depend upon who you are or what you have, it depends solely upon what you think.”

-Dale Carnegie

The kids did a great job with their lists and I enjoyed hearing about how they like swimming and sunshine, ice cream, family members and not being at school:)

All day long, I found myself thinking about the things that make me happy and, what do you know, I found myself happier despite the fact that I wasn’t actually directly experiencing anything on my list of happiness.

I wasn’t travelling or spending time with Mr. Torres.

I wasn’t eating ice cream or going for an early morning run.

Instead, I was surrounded by crazy sixth graders and a to-do list that could take all year to finish.

Maybe happiness really does depend solely upon what you think…

So take some time today, or tomorrow, or during a blah day to come up with a list of things that make you happy. You won’t regret it!

And while you’re at it, make these energy bites!

They are dee-licious, mostly healthy, super easy and will definitely add to the happiness in your life!

Verdict: I would not be able to claim that very many recipes have actually made as big an impact on my life as these little energy bites have. Mr. Torres and I always, always take snacks with us when traveling and these are now our go to take-alongs. They just fill the bill in so many different ways…easy, cheap, tasty, healthy, customizable (is that a word?), and popable. Everything tastes better when it’s popable!

Those look incredible! I’m also a huge fan of your dark colored cutting board. It looks great in the photos!

  1. Vitamix Trail Mix Banana Bites | om&nom - March 20, 2013

[...] Verdict: In short, Spring Break is awesome, the Vitamix is very expensive and these banana bites are a nice healthy snack. I’m not yet convinced that the Vitamix is completely worth the $400-$700 price tag, but while I’m here, I’ll keep using it and get back to you. In the meantime, try these little bites. I have no doubts that they could be made with a regular blender or food processor. I gave them a three-star rating because they don’t come close to the goodness of our favorite healthy snack. [...]
