Easy Anise Biscotti

Merry Christmas and Happy New Year! I know I’m a bit late on the first greeting and a day or two early on the second, but I sincerely hope that this holiday season was full of wonderful things for you!

Mr. Torres and I had a splendid time spending time with each other, our families and our friends!

One of my top ten favorite combos (along with barbecue/mac and cheese and chocolate/peanut butter) is green tea and dark chocolate.

I try to make it a habit to start most days this way:)

Because of this current habit, Mr. Torres surprised me with a glass teapot and tea flowers for Christmas!

The tea comes in the form of a little wrapped up ball and when you add hot water, it turns into a beautiful flower!

And although chocolate and tea is a perfect mash-up, sometimes I just want to enjoy a little something different with my hot beverage…

Something like a cookie! 

Or if we’re trying to be healthy for the new year, then we call it biscotti!

I made a super simple anise biscotti base and then dressed it up in two different ways. 

The first variation I tried was plain biscotti with a cinnamon chocolate drizzle.

The second variation was to add pecans and mini chocolate chips to the biscotti base.

Also delicious!

Verdict: Both of these variations ended up being super simple and I’m definitely looking forward to enjoying these with not only green tea, but some of my other cold-weather loves…hot chocolate, peppermint mochas and apple cider! I guess I can put up with winter for a bit longer:) Also, it would be super simple to omit the anise extract and add a different extract or just leave it out altogether. Plus, the variations of limitless…cranberry and white chocolate chip, cinnamon and nutmeg, double chocolate, triple chocolate! I think I might have to try that last one!
