A couple of summers ago I made a couple of attempts to make healthy, dairy-free ice cream alternatives.
The first attempt combined apple juice, pineapple and bananas and ended up being a pretty sorry excuse for ice cream.
You guys are going to love this recipe.
You start out by mixing one box of white cake mix with one box of angelfood cake mix.
Add three tablespoons of the mix to a mug.
Mix in two tablespoons of water.
And microwave for one minute.
3, 2, 1…Tada! It’s a little shortcake to be enjoyed with whatever fresh fruit, jam, peanut butter or chocolate sauce you have! I went with blackberries and a dollop of vanilla ice cream:)
