A Gift from Italy: Tomato and Cauliflower Orecchiette

After receiving a package of beautiful orecchiette from my sister who living abroad for the past year, I knew I had to find a killer recipe to use it with. Talk about pressure!

Multi-colored Orecchiette

 

 

After scouring the internet for just the right recipe, I decided to go with a recipe from Simply Recipes for Pasta with Roasted Cauliflower and Prosciutto. This recipe included delicious, simple ingredients that looked just right for highlighting my “little ears” (just slipping in some educational info there, aka what orecchiette means). 

Ingredients

The original recipe put the emphasis on the roasted cauliflower (which is good), but I’m not THAT crazy about cauliflower and was hoping to achieve more of a tomato-y, cheesy type of dish. Therefore, there’s a bit more tomato, a bit more cheese and also a bit more meat (what can I say? Mr. Torres is definitely not a vegetarian). Continue reading
